Prosciutto Wrapped Peaches and Feta

An easy appetizer recipe made with summer's juiciest peaches, savory prosciutto, salty feta cheese, drizzled with balsamic vinegar.

Ingredients 

  • 2 yellow peaches
  • 8 thin slices prosciutto
  • block of feta cheese
  • 1 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • fresh basil for garnish

Instructions

  • Slice peaches.
  • Cut the prosciutto slices in half or in thirds if they are very long.
  • Cut chunks of feta cheese about the same length as the peach slices.
  • Hold a peach slice and a piece of feta cheese together and wrap snuggly with a slice of prosciutto.
  • Repeat until all of the peach slices are covered.
  • Brush both sides of the wrapped peach and feta with olive oil.
  • Place 3-4 at a time into a hot skillet on the stove or the grill.
  • Grill for 1-2 minutes on each side.
  • Remove from grill or skillet and drizzle with balsamic vinegar or balsamic glaze.
  • Garnish with fresh basil and serve.

Notes

Krazy Kitchen Mom Tips
  • Prosciutto can be very expensive, so I recommend buying just the amount you need for the recipe. Ask the person at the deli counter to cut 6 very thin slices of prosciutto. You will save a lot of money and will not have any waste.
  • In my opinion, sometimes prosciutto can have too much fat. I find the extra fat tends to make it a bit chewy. I like to peel off some of the larger fat pieces while leaving the smaller thin lines which hold a lot of flavor.
