Skillet Blondie Cookie

This is the easiest homemade baked "cookie" you'll ever make! Hot out of the oven, grab spoons and your friends and dig in.

Ingredients 

  • 1 cup room temperature butter
  • 2 cups light brown sugar
  • 2 large eggs
  • 1-1/2 teaspoons vanilla extract
  • 1-3/4 cup flour
  • 1/2 teaspoon baking powder
  • pinch salt

Instructions

  • Preheat oven to 350°.
  • Using a hand mixer or stand mixer, mix butter, brown sugar, eggs, and vanilla until they are smooth and creamy.
  • Add the flour, baking powder, and salt.
  • Mix for 2-3 minutes, scraping down the sides of the bowl as needed.
  • Add chocolate chips or chocolate candies. (Save 1/2 cup of the candies for the top of the blondie.)
  • Spray a skillet with non-stick cooking spray. If you are using a well-seasoned cast-iron skillet, no need to spray it.
  • Scoop the blondie dough into the skillet and spread it out evenly to the edges.
  • Place the extra candies on the top of the blondie dough.
  • Bake at 350° for 40-45 minutes.

Notes

Krazy Kitchen Mom Tips:
  • Make sure the butter is room temperature.
  • Don't over-bake the blondie, it should be soft and gooey on the inside and crispy around the edges.
  • This recipe is easy to adjust - add nuts, dried fruit, butterscotch chips, mint chocolate chips, peanut butter chips - use your imagination.
  • Serve the blondie warm with ice cream or cut pie-shaped slices for each person.
