Notes

  1. Buy puff pastry when it's on sale. Store it in the freezer. To thaw, place it in the refrigerator for 24 hours. Don't rush this because you want to be able to unfold the pastry easily.
  2. You can thaw frozen puff pastry at room temperature but you need to watch it closely because it still needs to be cool but thawed enough that you can unfold it without cracking.
  3. If you are using a cookie cutter or a paring knife to puff pastry, make sure they are sharp. A dull cookie cutter or knife will tear the pastry.
  4. If the dough seems sticky or too warm after you cut the stars, chill them in the refrigerator for 10 minutes or while you preheat your oven.
  5. Make sure that you brush the top with an egg white. One of my best tips for egg whites, is it use the store-bought container of egg whites. That way you are only using a little at a time and not wasting an entire egg.
