Ingredients 

  • 1-1/4 cups plain Greek yogurt
  • 1/2 english cucumber - diced (1 cup)
  • 1-2 Roma tomatoes - diced (1 cup)
  • 1/4 small onion - diced (1/4 cup)
  • 2 tbsp chopped fresh cilantro leaves
  • 1 tbsp choppen fresh mint leaves - chopped very small
  • 1/4 teaspoon ground cumin
  • 1 tbsp fresh lemon juice
  • salt and pepper to taste.

Instructions

  • Dice the cucumber and tomatoes into bite-sized pieces.
  • Dice the onion into small pieces.
  • Chop the cilantro.
  • Chop the mint very small, almost minced.
  • Place all of the ingredients into a bowl and mix them together.
  • Refrigerate for 1-2 hours.
  • Garnish with fresh mint and serve as a condiment to spicy food or as a dip with pita chips.

Serving Suggestions
  • Serve Raita as a condiment with spicy foods or as a dip with pita chips, toasted Naan bread, crackers, and veggies. It can also be served as a side salad with grilled chicken or fish.
