Cranberry Apple Crisp

Fall and winter are my favorite seasons to make fruit crisps. For this recipe, I used fresh cranberries, apples, and warm seasonal spices.

Ingredients 

Cranberry Apple Ingredients

  • 3 cups fresh cranberries
  • 2 cups peeled and diced apples (about 2 apples)
  • 1 cup brown sugar
  • 2 tbsp flour
  • 1 tbsp vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • dash of salt

Crisp Topping Ingredients

  • 3/4 cup flour
  • 3/4 cup old-fashioned oats
  • 1/2 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • dash of salt
  • 8 tbsp cold butter cut into pieces

Instructions

  • Preheat oven to 350°.
  • Spray a large shallow baking dish with non-stick cooking spray.
  • Peel and dice the apples into bite-sized pieces and add them to a bowl with the cranberries.
  • Mix the other Cranberry Apple ingredients in a bowl and pour the mixture into the baking dish.
  • Add the topping ingredients to another bowl and with a pastry cutter or your fingers mix the butter with the other ingredients.
  • The topping mix will be chunky.
  • Spread the chunky topping mix on top of the cranberry-apple mixture.
  • Bake uncovered for 35 minutes.

Notes

Krazy Kitchen Mom Tips
  • If you don’t have fresh cranberries, use frozen thawed cranberries.
  • Serve warm with vanilla ice cream or frozen yogurt.
  • Store leftovers in an airtight container in the refrigerator for 3 days.
  • Shopping tip: Fresh cranberry goes on sale at the end of the holiday season; I recommend buying several bags and storing them in the freezer. They will last the entire year.
