Apple Fall Salad

This beautiful salad is filled with mixed greens, baby spinach, crispy fall apple slices, juicy blackberries, and tangy goat cheese.

Ingredients 

  • 1 bag mixed greens
  • 1 apple
  • 1/3 cup dried cranberries
  • 1 tbsp goat cheese I use berry goat cheese
  • 1/3 cup walnut pieces
  • 2/3 cup fresh blackberries
  • viniagrette of your choice

Instructions

  • Place mixed greens on a platter.
  • Cut the apple into thin slices and fan them out in groups on the mixed greens.
  • Place the blackberries on the mixed greens.
  • Break the goat cheese into small pieces with your fingers and spread it around the salad.
  • Top with dried cranberries and walnut pieces.
  • Dress the salad with your favorite vinaigrette.

Notes

Krazy Kitchen Mom Tips
  • To keep apple slices from browning, pour 1/4 cup of water into a shallow dish and add 1-2 tablespoons of freshly squeezed lemon juice. Submerge the apple slices in the lemon water for 2-3 minutes.
  • Regular or honey goat cheese can be substituted for berry goat cheese.
  • To keep fresh berries fresh, do not wash them until you are ready to use them.
  • Add your favorite ingredients to make a variation of the salad.
    • Add hardboiled egg slices and bacon bits for a more savory flavor.
    • Add diced pears.
    • Substitute pecans for walnuts.
