Place cilantro stems, lime juice, avocado oil, honey, salt, and pepper in a small bowl or jar and whisk until blended. Set aside.
Cut avocado in half, discard the large pit and peel the halves.
Lay the avocado halves face down on a plate.
Drizzle the dressing over avocado.
Top each half with 1 tbsp salsa.
Garnish with jalapeno slices, cilantro leaves, and lime slices.
