Strawberry Lemon Croissants

Brighten up breakfast or brunch with these easy fruity creamy croissants. Made with store-bought mini croissants, they are ready in minutes.

Ingredients 

For Croissants

  • 6 mini store-bought croissants
  • 4 oz cream cheese - softened at room temperature
  • 1/3 cup lemon curd
  • 1/3 cup confectioners sugar
  • 1/2 pint cleaned fresh strawberries

For Glaze

  • 1 cup powdered sugar
  • 2-4 tbsp fresh squeezed lemon juice
  • yellow and pink food coloring

Instructions

  • Mix powdered sugar, lemon curd, and cream cheese with a hand mixer until smooth and creamy.
  • Slice strawberries.
  • Spread one-half of the croissants with some of the cream cheese mixture.
  • Layer strawberries on top of the cream cheese and put the tops on the croissants.
  • Place croissants on a grill pan or cooling rack with a pan or parchment below it so they are ready to be glazed.
  • Divide the remaining powdered sugar and lemon juice into two small bowls.
  • Add yellow food coloring to one bowl and pink to the other and stir.
  • Add additional food coloring as needed to obtain the desired color.
  • Drizzle the pink and yellow glaze over the croissants.

Notes

Krazy Kitchen Mom Tips
  • To prep ingredients in advance, slice strawberries and make the lemon cream cheese mixture. Store both in the refrigerator for up to 2 days. Remove the lemon cream cheese from the refrigerator 1 hour prior to assembling the croissants.
  • I recommend that you serve and eat these within 2-3 hours of assembling them.
