Mom's Ham Salad Recipe

My Mom used to make a version of this recipe but with bologna. I use ham in my recipe and it's perfect for leftover ham.

Ingredients 

  • 2 cups large diced ham pieces
  • 1 cup sweet gherkin pickles
  • 1/4 cup sweet gherkin pickle juice (from the jar)
  • 1/3 cup mayonnaise

Instructions

  • Place the ham and pickles into a food processor and pulse until chopped into small pieces.
  • Add the mayonnaise and stir.
  • Serve immediately or cover and refrigerate up to 2 days.

Notes

Serving Ideas 
  • I like to serve this as an appetizer with salty crackers.
  • Ham salad is great in tea sandwiches or for a packed lunch sandwich.
  • Eat it for breakfast and serve it with scrambled eggs or hard-boiled eggs.
  • Veg it up! Add chopped celery, chopped carrots, and chopped onion.
