Preheat oven to 350°.
Add butter, powdered sugar, orange zest, and salt to a mixing bowl and mix until creamy.
Add Prosecco and continue mixing on low speed.
Add orange juice and continue mixing on low speed.
Add flour and mix on low for 1 minute, increase speed to medium and mix until fully combined.
Remove half of the cookie dough mixture and set it aside.
Add a few drops of orange food coloring to the mixing bowl with half of the dough and mix or stir until the dough turns orange.
Prepare a piping bag or a zip-top bag with a large star tip.
Transfer the orange dough and the non-colored dough to the piping bag side by side.
Pipe the dough in a circle to form the cookies.
Add sprinkles and bake for 11-14 minutes.
