Thaw Cool Whip in the refrigerator for 1-2 hours or overnight.
Chop strawberries into pieces and place them in a medium-sized bowl.
Add honey.
Smash strawberries and honey with a potato masher or a fork.
Add cream cheese and mix, using a hand mixer, for 2-3 minutes. Start the mixer on low for one minute and then increase to medium.
Add the Cool Whip and mix again on medium for another 2-3 minutes.
Spoon into dessert dishes.
Refrigerator for 1 hour before servings.
Garnish with fresh strawberry slices and fresh mint leaves.
