No-Bake Strawberry Cheesecake Mousse

Smooth, creamy, silky strawberry cheesecake mousse with bits of fresh strawberries. It has all of the flavors of a baked cheesecake without the work.

Ingredients 

  • 1 pint fresh strawberries
  • 4 ounces cream cheese
  • 1/2 cup Plain Greek Yogurt
  • 1/2 8-ounce tub Cool Whip
  • 1 tbsp honey

Instructions

  • Thaw Cool Whip in the refrigerator for 1-2 hours or overnight.
  • Chop strawberries into pieces and place them in a medium-sized bowl.
  • Add honey.
  • Smash strawberries and honey with a potato masher or a fork.
  • Add cream cheese and mix, using a hand mixer, for 2-3 minutes. Start the mixer on low for one minute and then increase to medium.
  • Add the Cool Whip and mix again on medium for another 2-3 minutes.
  • Spoon into dessert dishes.
  • Refrigerator for 1 hour before servings.
  • Garnish with fresh strawberry slices and fresh mint leaves.

Notes

  • This dessert can be made 1 day in advance. Store it in an airtight container, in the refrigerator. Leftovers will store for 2-3 days.
  • Serve Strawberry Cheesecake Mousse in mini dessert dishes, in larger individual dessert dishes, or a large family-style decorative dessert dish.
  • This mousse is great served with small shortbread cookies that can be dipped into the mousse.
