New Year's Eve Aperol Spritz

Ring in the new year with one of this year's hottest cocktails, The Aperol Spritz made with sparkling Prosecco or Champagne and Aperol.

Ingredients 

  • 1.5 ounces of Aperol
  • Juice from 1/2 lemon
  • 1 ounce simple syrup
  • Prosecco
  • Sparkling soda water
  • 1 lemon slice
  • Mint for garnish

Instructions

  • Fill an 8-ounce glass 1/2 way with crushed ice.
  • Add a slice of lemon to the side of the glass.
  • Add Aperol, lemon juice, and simple syrup.
  • Fill the glass almost full with Prosecco.
  • Top off with a little bit of soda water.
  • Garnish with a big handful of fresh mint.

Notes

Krazy Kitchen Mom Tips
  • I recommend using a large stemmed glass or an old fashion glass for this cocktail.
  • Ice is a must for this one. Be sure to fill the glass with ice before adding ingredients.
  • Substitute fresh orange for the lemon for a traditional Aperol spritz.
  • This cocktail is perfect for the holidays, a summer picnic, or an afternoon brunch.
  • To make simple syrup, simply place equal amounts of sugar and water in a small stovetop pan. Heat until the sugar dissolves. Cool completely and store in a mason jar, with a lid, in the refrigerator for 3-4 weeks.
