Greek Salad Flatbread Pizza

This is the best of both worlds - pizza and salad. A bright flavor-packed Greek salad on top of a flatbread covered in melted cheese and diced chicken.

Ingredients 

  • 2 small flatbreads
  • 1 tbsp extra virgin olive oil
  • 2 chicken breasts - grilled and sliced into bite-sized pieces
  • 3/4 cup mozzarella cheese
  • 2 cups mixed greens lettuce
  • 10 kalamata olives - halved
  • 10 cherry tomatoes - halved
  • 1/4 cup feta cheese - cubed
  • 1/4 of a cucumber - diced
  • 4 Peperoncini peppers

Greek Salad Dressing

  • 2 tbsp extra virgin olive oil
  • 2 tbsp red wine vinegar
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon Dijon mustard
  • 1/2 teaspoon minced garlic
  • 1 squeeze fresh lemon juice
  • salt and pepper

Instructions

  • Preheat oven to 400°
  • Brush one side of the flatbreads with extra virgin olive oil
  • Place them on a cookie sheet and bake for 7-9 minutes.
  • Remove the flatbreads from the oven and top them with mozzarella cheese and grilled chicken.
  • Place them back into the oven for another 6 minutes.
  • While flatbreads are cooling, mix the lettuce, tomatoes, cucumbers, olives, and feta cheese.
  • Toss the salad with the Greek salad dressing.
  • Divide the salad between the 2 flatbreads.
  • Garnish with fresh oregano and serve with pepperoncini peppers.
