Watermelon Feta Salad

Watermelon Feta Salad is a classic summertime salad that delights the palate with the sweetness of juicy watermelon and the tanginess of feta cheese and fresh mint. 

Watermelon Feta Salad

I grew up eating a lot, and I mean a lot, of watermelon because it was one of my Dad’s favorite summertime fruits. We usually ate it just the way Dad liked it…fresh sliced sprinkled with a little bit of salt. Because we ate so much of it, I didn’t really get too excited by summertime watermelons for a long time.

Watermelon Feta Salad

A few years ago we were planning a large cookout for Mother’s Dad and since we had a lot of people coming, I needed to be a bit more creative with my fruit salads. That’s when I first made Watermelon Feta Salad. It’s probably one of the easiest fruit salads you’ll ever make. And it has just a few ingredients:

  1. Watermelon
  2. Feta cheese
  3. Mint
  4. Honey lime dressing

When I make this salad I cut my watermelon the way shown in the short video below to get more even cuts. I also like to cut my feta cheese just a little smaller but not too small. I’m not fond of packaged crumbled fets (although you can certainly use that). I like to use a block feta so I have control over the size of each bite. It’s also important to buy a good feta cheese…it’s not time to skimp on cheese with this recipe.

And if you like playing with your food – like me – you can get creative with plating your watermelon salad.

Pro tips:

  1. Make this salad the same day you are going to serve it.
  2. Serve the salad very cold.
  3. Use scissors to cut the fresh mint so that you have even ribbons of mint.

Description

Watermelon Feta Salad is a classic summertime salad that delights the palate with the sweetness of juicy watermelon and the tanginess of feta cheese and fresh mint. 


Ingredients

Scale
  • 1 watermelon
  • 1 8-ounce block of feta cheese
  • 15–20 leaves of fresh mint
  • Juice and zest of 2 limes
  • 1 TBS honey
  • 1 teaspoon of extra virgin olive oil

Instructions

  1. In a small bowl, mix together lime juice and zest, honey, and olive oil – set aside until time to serve salad.
  2. Cut watermelon and cheese into small bite-sized pieces
  3. Stack mint leaves on top of each other and roll them up long-wise. Use scissors to cut them into long ribbons.
  4. Add mint to cut up melon and cheese.
  5. Place in the refrigerator until ready to serve.
  6. When ready to serve, stir dressing and toss it into the salad.
