On weekend mornings we like to have breakfast pool side and Vince likes to create his special Breakfast Burritos. He actually does this one without me (OK – I peaked to get the specifics for this post).
4 large soft tortilla shells
1 TBS water
Previously grilled Kielbasa, Bratwurst (or any combination of sausage)
1 small tomato
Shredded jack cheese
Sauté onions on the stove top; add sausages and tomatoes and sauté until hot. Remove from heat and place in a bowl.
Beat eggs and water. In the same pan as the sausage mixture, scramble the eggs.
Warm tortilla shells in microwave.
Spread sour cream on tortilla shell; add large spoons full of sausage and egg; top with jack cheese and roll tightly.
