A great way to mix it up with Veggies is to take advantage of summer time and use the grill. Anything on a stick is also a wonderful way to treat your family and friends, not to mention a secret weapon in portion control. Try it – mix it up – grill it and watch the veggies disappear!
You can actually use anything you like. I chose:
White button mushrooms
Multi-colored bell peppers
Soak wooden skewers in water for about 30 minutes prior to making kabobs.
Simple skewer vegetables in any order, brush with extra virgin olive oil, salt and pepper to taste and grill until veggies are golden brown and delicious. It’s good for you!
