Baked with sun-dried tomatoes and olives – this is sure to please everyone. This chicken is impressive enough to serve company.
4 chicken thighs – bone in/skin on
1 clove garlic – minced
3 TBS extra virgin olive oil
Chicken gravy – you can use prepared gravy mix or jar or make your own using chicken stock.
1/2 jar sun-dried tomatoes in oil
12 large kalamata olives
Handful fresh basil
1/4 cup red wine
1 teaspoon oregano
1 teaspoon thyme
1/2 garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
Heat oven to 400 degrees
Heat olive oil in large oven-proof skillet; add garlic and cook for 3 minutes.
Salt and pepper chicken and place in skillet. Cook 3-4 minutes both sides. Remove chicken and set aside.
Deglaze skillet with wine; add gravy and spices.
Add sun-dried tomatoes and olives
Return chicken to skillet; cover and bake in oven for 40 minutes.
