Protein-packed and full of tropical flavors. You won’t even miss the butter and syrup!
2 eggs (I use egg beaters)
2/3 cup of Oats
2 scoops of protein powder (I use Vi-Shake Vanilla)
2/3 cup plan Greek Yogurt (you can also use cottage cheese
1 teaspoon baking powder
1 teaspoon vanilla extract
Sweeten coconut flakes
Place all ingredients (except banana, walnuts and coconut) into blender and mix.
Spray stove-top griddle with cooking spray. Pour pancake mixture onto hot griddle. Top each pancake with a sprinkle of coconut flakes and walnuts. When the pancakes start to bubble, flip.
Top with more Greek yogurt, sprinkle of coconut and slices of banana. It’s good for you!
