What is Chia?
Chia is a seed a very small edible seed that comes from a flowering plant in the mint family. But don’t let the “mint family” scare you because it doesn’t have any type of a mint flavor. I think chia seeds are actually tasteless but they add a slightly crunchy texture. They absorb liquids easily and in this jam recipe, they replace any type of pectin which would normally be used in making jams or jellies. The seeds plump up and provide the jam-like texture.
White Chia Seeds vs. Black Chia Seeds
In this recipe, I used the white chia seeds just because I wanted the visual sense that the chia seeds look a bit like the fresh raspberry seeds. As far as I’m concerned there is absolutely no difference between black chia seeds and white chia seeds expect the color. But I have read that the black chia seeds have a bit more nutritional value as far as slightly more fiber while white chia seeds have slightly more protein and both are a good source of omega 3. Chia seeds are actually known as a superfood because of their nutritional value. Chia seeds have a very long shelf life if you store them in a cool, dry place in a sealed container.
Other ways to use black or white chia seeds
I probably eat these little seeds 3-4 times a week in different forms. Here are some of my favorite way to use them:
- Add 1 tablespoon to a smoothie for extra fiber and texture. Choose black or white depending upon the color of your smoothie.
- I like to add a teaspoon to a 5.3-ounce container of yogurt to give it texture. I usually use the black seeds in my plain Greek yogurt.
- They go great sprinkled on oatmeal. I use the white seeds in my oatmeal because I also add raisins which give that little black/brown color.
- Sprinkle chia seeds on a salad to give it a bit more color and fiber.
- Ice cream! Yes – you can add chia seeds to your ice cream. Black or white – you choose!

Ingredients
- 6 ounces of fresh raspberries
- 2 TBS honey (substitute: 1 TBS agave or 2 TBS sugar)
- 3 TBS Chia seeds (I used white chia seeds in this jam)
Instructions
- Add fresh raspberries and honey to a small saucepan.
- Heat on medium heat for 4 minutes.
- Smash the berries in the saucepan with a potato masher or a fork.
- Remove from the heat.
- Cool for 5 minutes.
- Add the chia seeds.
- Refrigerate in a mason jar or air-tight container for up to 1 week.
