Thai Peanut Chicken Noodles is a one-bowl meal with grilled chicken, ramen style noodles and colorful cabbage slaw tossed with Thai peanut sauce.
There is something about chicken, noodles, and peanut sauce that make me actually crave them. The chicken is grilled perfectly tender, while the noodles are soft and the peanut sauce is spicy. I like to add a crunchy bright veggie slaw and now you have the perfect light lunch or dinner.
What is peanut sauce?
Peanut sauce is also known as satay. It’s made with roasted peanuts or peanut butter. Here are the ingredients for my peanut sauce:
- Creamy peanut butter
- Soy sauce
- Fish sauce
- Rice wine vinegar
- Red pepper flakes
- Hot water

Let’s talk fish sauce
Fish sauce is a fermented sauce made from the liquid of fermented fish and salt. Take my advice and buy a good bottle of fish sauce but never ever smell it. I mean DO NOT open the bottle and bring it to your nose to see what it smells like. It doesn’t smell good! BUT – a small amount of fish sauce added to any Asian style dish adds an amazing deep rich flavor that enhances the entire recipe. I know that sounds counter-intuitive, but it really does have what they call Umami kind of like Worcestershire sauce
Other uses for peanut sauce
Peanut sauce is so versatile you can use it on almost anything. Here are some ideas:
- Use it as the base on a Thai Peanut Chick Flatbread
- Use it as the dipping sauce for Chicken Satay
- Use it a sauce for a chicken burger or a grilled chicken sandwich
- Use it as a veggie dip
- Use it as a dip for apples
- Dip warm pretzels in it
- Drizzle it over a sliced banana
- Use it as a steak sauce
- Spread it on a bagel
- Spread it on a cheeseburger

Ingredients
For the chicken marinade:
- 2 chicken breasts
- Juice from one lemon
- 1 TBS fish sauce
- 2 TBS of mirin (substitution: Rice wine vinegar)
- 3 TBS sweet chili sauce
- 3 TBS apricot preserves
- 2 small packages of ramen noodles – cooked
- 1/4 of a small head of red cabbage – sliced very thin
- 1/2 of a small red pepper – diced
- A handful of carrot sticks
- 4 TBS Rice wine vinegar
- 2 TBS extra virgin olive oil
- 1 TBS sugar
- Quick and Easy Thai Peanut Sauce (substitution: store-bought peanut sauce)
- 2 TBS peanuts – crushed for garnish
- 1 TBS white sesame seeds
Instructions
Marinate the Chicken:
- Cut chicken breasts into strips and place them in a zip-top bag.
- In a small bowl, whisk together the lime juice, fish sauce, mirin, chili sauce, and preserves.
- Pour the mixture into the bag with the chicken.
- Marinate in the refrigerator for 3-4 hours.
Cook Chicken:
- Add one TBS olive oil to a stove-top skillet and cook chicken until it is done.
Slaw:
- Mix together the rice wine vinegar, 1 TBS olive oil, and sugar.
- Place cabbage and carrots in a small bowl.
- Pour dressing over the cabbage and carrots.
Serving:
- Place chicken, noodles, and slaw on to plates.
- Garnish with sesame seeds and crushed peanuts.
- Serve with Quick and Easy Thia Peanut Sauce.
