Spinach Salad with Pomegranate Poppy Seed Dressing is made with pomegranate molasses syrup, white vinegar, mayonnaise, and sugar. A little tangy and a little sweet.
Say goodbye to boring spinach salads and store-bought salad dressings. It’s so easy to make a bright fresh salad with fruits and cheese you have on hand. For this salad, I used baby spinach, bright fresh blueberries, pomegranate arils (seeds), spinach, and pistachios.
I dressed it all up with a tangy and sweet Pomegranate Poppyseed Dressing. To make the poppy seed dressing, I used my regular poppy seed salad dressing recipe and added some of I my pomegranate molasses syrup. Not only did it give it a wonderful color, but it added a rich sweet flavor. My family raved over this salad dressing, so go ahead and try it this holiday season; I bet you’ll get raves too (insert wink).

Ingredients
Dressing
- 1/4 cup mayonnaise
- 3 TBS sugar
- 3 TBS white vinegar
- 3 teaspoons pomegranate molasses syrup
- 1.5 TBS poppy seeds
Salad:
- 1 bag of baby spinach
- 1/2 pint of blueberries
- Seeds from 1/2 pomegranate
- 2 ounces goat cheese – broken into small pieces
- 20 shelled pistachios
Instructions
Dressing
- Whisk all ingredients together.
- Store in the refrigerator in a covered jar for a week.
Salad:
- Place all the salad ingredients into a serving dish.
- Drizzle with Pomegranate Poppy Seed Dressing.
