Sparkling Apricot Margaritas are made with fresh apricot puree, sparkling apricot flavored water, tequila, triple sec, and a squeeze of fresh lime. Light and refreshing.
There’s a great little family produce market not far from my house and I swear I go there at least three times a week. A few weeks ago during one of my market trips, my eyes fixated on a bin full of fresh, ripe, orange little apricot. I swear they were calling my name. And they were so inexpensive that I grabbed a bag and bought about a dozen.
When I got home from the market I realized that I just bought a dozen apricots and had no idea what I was going to do with them. So that’s where this recipe actually came from – having so many apricots that I needed to get creative. And the rest is history because this is now one of my all-time favorite cocktails – especially during stonefruit season – which is summertime.
