Simple Roasted Carrots


Simple Roasted Carrots are an easy and impressive side dish make with olive oil, salt, and pepper. They are slow roasted for a deep earthy flavor.


  • 1 bunch of rainbow carrots
  • 1 teaspoon fresh thyme leaves (separated from stems)
  • 1 TBS extra virgin olive oil
  • Salt and pepper
  • 12 TBS honey
  • 45 sprigs thyme for garnish


  1. Preheat oven to 450°
  2. Wash and peel carrots leaving the tops on.
  3. Place carrots in a baking dish or a cookie sheet.
  4. Drizzle with olive oil.
  5. Add salt and pepper.
  6. Cook for 25-30 minutes.
  7. Drizzle with honey and garnish with thyme sprigs.
