Description
Simple Roasted Carrots are an easy and impressive side dish make with olive oil, salt, and pepper. They are slow roasted for a deep earthy flavor.

- 1 bunch of rainbow carrots
- 1 teaspoon fresh thyme leaves (separated from stems)
- 1 TBS extra virgin olive oil
- Salt and pepper
- 1–2 TBS honey
- 4–5 sprigs thyme for garnish
Instructions
- Preheat oven to 450°
- Wash and peel carrots leaving the tops on.
- Place carrots in a baking dish or a cookie sheet.
- Drizzle with olive oil.
- Add salt and pepper.
- Cook for 25-30 minutes.
- Drizzle with honey and garnish with thyme sprigs.
