We are totally obsessed with our favorite cookies dressed up for summer. These cookies have the traditional cinnamon sugar buttery flavor with a nutty addition.
Dressed up for Summertime
We love the way these cookies turned out! All dressed up for summer. Kids and adults love how they look and go crazy over how good they taste. You must make these cookies!
Ingredients
Let’s Make Sand Dollar Snickerdoodles
- Using a stand mixer or hand mixer, beat butter, sugar, eggs, and vanilla until smooth and creamy.
- Whisk together flour, baking soda, and cream of tartar.
- Slowly add the flour mixture to the egg and sugar mixture and beat until it comes together.
- Place the mixing bowl into the refrigerator and chill the dough for 30-60 minutes.
- While the dough is chilling, mix the cinnamon and sugar and set it aside.
- Preheat the oven to 350°.
- Use a cookie scoop to scoop each cookie so they are all the same size.
- Roll each ball in the cinnamon sugar and place it on the cookie sheet.
- Slightly flatten each cookie with the palm of our hand.
- Arrange 5 almond slivers on each cookie to look like a sand dollar.
- Bake for 12 minutes.
- Cool for 10 minutes before transferring them to a cooling rack.

- It’s important to chill the dough before forming the balls and baking them. Do not skip this step.
- When using eggs in any baking recipe, take the eggs out of the refrigerator at the same time as the butter so they both come to room temperature.
- Perfect kids’ project: Have the kids sort through the almond for the perfect shapes and sort them into sets of five. The kids can also decorate the cookies with the almonds.
