Roasted Parmesan Zucchini Chips

This is our new favorite snack…crunchy, healthy, and cheesy! Roasted Parmesan Zucchini Chips are easy to make and are ready in less than 25 minutes from start to finish. And when I say “finish” I mean – eating them all (insert wink).

When I was in college, one of my favorite and inexpensive snacks to make was zucchini chips. Back then we fried them in oil. But nowadays I tried to stay away from most fried food, so I decided to bake them instead. I’m so happy with the way they turned out – tastes like old times, but with much less fat.

My daughter came over right after I took these out of the oven and after one bite, she proclaimed them her new favorite snack too.

Description

Roasted Parmesan Zucchini Chips are a healthy and tasty snack. They are made with flour, parmesan cheese, and egg. Easy and delicious!


Ingredients

Scale
  • 1 large zucchini
  • 1 cup finely grated parmesan cheese
  • 1 cup white flour
  • 2 teaspoons dried thyme
  • 1/2 teaspoon garlic powder
  • Pinch of salt
  • Pinch of pepper
  • 1 egg – beaten

Instructions

  1. Preheat oven to 450°
  2. Slice zucchini into thin slices – about 1/8 inch cuts.
  3. Add the flour, salt, and pepper to another shallow bowl.
  4. Add beaten egg to one shallow bowl.
  5. Add the grated parmesan cheese, garlic powder, and thyme to another shallow bowl.
  6. Dip a slice of the zucchini into the flour and shake off the excess.
  7. Dip it into the egg and shake off the excess.
  8. Dip it into the parmesan.
  9. Repeat this dipping for all of the zucchini.
  10. Place the slices onto a parchment lined cookie sheet.
  11. Bake for 18-20 minutes, until they are brown and crispy.

You’ll need three shallow bowls to make this recipe.
