When I told my husband that I added slow roasted grapes to his oatmeal, he was indifferent about it. I often make changes to recipes so he just goes along. Later that same day, I got a text from him that said, “OMG the oatmeal with grapes is the bomb (he used the bomb emoji)! So I guess he liked my Roasted Grapes Oatmeal.
Let’s talk about roasting grapes…
I discovered the art of roasting grapes a few years ago. I’ve roasted both green and red grapes. The green grapes turned out OK, but wow the red grapes just popped with flavor – so I’ve stuck with the red grape roasting version. These are so easy to make, I just drizzle them with extra virgin olive oil and just a pinch of salt and slow roast them. You won’t believe how good my house smell while they are baking. And you can put them on almost any dish.
How do you roast grapes?
Roasted grapes are probably one of the easiest recipes. It takes a bunch of grapes, some extra virgin olive oil, and a pinch of salt – that’s it! Three ingredients, if you call salt and ingredient, that gives you a naturally deep sweet juicy flavor.
What else can I do with roasted grapes?
- Of course, put them in your oatmeal, like this recipe.
- Top grilled chicken and fish.
- Smash them and little serve them on grilled toast like a roasted grape bruschetta.
- Pour hot roasted grapes over cream cheese and serve it as a cheese dip.
- Spoon them over ice cream or yogurt.
- Substitute roasted grapes for strawberries and make roasted grapes shortbread.

Roasted Grapes Oatmeal

Ingredients
For the oatmeal:
- 1 cup of rolled oats
- 2 cups of water
- dash of salt
- 1/4 cup of black raisins
For the grapes:
- Bunch of red grapes
- 1 teaspoon extra virgin olive oil
- Pinch of salt
Instructions
For the oatmeal:
- Place water and salt in a stove-top pan and bring it to a boil.
- Add rolled oats and raisins.
- Cook for 3-5 minutes.
- Remove from heat.
For grapes:
- Preheat oven to 375°
- Spread grapes out on a large cookie sheet.
- Drizzle with olive oil and pinch of salt.
- Stir the grapes to ensure they all get the olive oil.
- Roast for 50 minutes, stirring occasionally.
Assembly
- Spoon 1/2 of the oatmeal into 2 separate bowls.
- Add and sweetener you desire.
- Top with roasted grapes.
- Store any leftover grapes in the refrigerator for 2-3 days.

The grapes can be stored in the refrigerator for 2-3 days in an airtight container.
