Raspberry Prosecco Ice Cream Float is a grown-up drink made with Fresh Raspberry Aperol Sauce, ice cream and bubbly prosecco.
I couldn’t believe my eyes last week as I was wandering through the produce department at my local market, they had fresh raspberries for $0.99 for a 6-ounce container. So I grabbed three of them. Raspberries are one of those fruits that you need to use right away, but for $0.99 it was worth buying them and then deciding what I was going to make.
I was happy that I bought three containers because I had a bit of a sweet-tooth that day. I was thinking fresh raspberries over vanilla ice cream…but it got even better when I created this Prosecco Raspberry Ice Cream Float recipe with my special Raspberry Aperol sauce.
Instead of using macerated raspberries, I decided to make a raspberry sauce. Then I experimented by adding Aperol and I had a match made in heaven! I’m calling Fresh Raspberry Aperol Sauce.
Ingredients in the Fresh Raspberry Aperol Sauce
- 6 ounces of fresh raspberries
- 2 ounces of Aperol
- 1 ounce of agave
What is Agave
Agave is a syrup, sometimes called nectar. It comes from the Agave plant and is an all-natural sweetener. It has a honey-like consistency and can be used interchangeably with honey. It’s a bit sweeter than both honey and sugar, so you can use less and still get a great sweet flavor. You can buy Agave at most grocery stores.
Krazy Kitchen Mom Raspberry Buying Tips:
- The shelf-life of most raspberries is very short if they are stored on the counter. So you will need to store them in the container you bought them in. Place them in your fruit crisper and they will last up to 3 days.
- If you find fresh raspberries on sale as I did, buy them! When you get home, wash them, line them up one-by-one on a dry paper towel up-side-down so the water doesn’t pool and let them dry completely. Place them in a zip-top bag and freeze them.
- Inspect the package of raspberries very closely before you buy them. Look for white or dark spots which indicate mold. Do not buy berries with mold on them.
- Make a sauce or a jam which will last 5-6 days in the refrigerator.

Ingredients
- 6 oz. fresh raspberries
- 2 oz. Aperol
- 1 oz. Agave (substitution: 1 TBS granulated sugar)
- 1 bottle Prosecco
- 4 large scoops vanilla ice cream
- 1 small bottle club soda
- Raspberries for garnish
Instructions
Do ahead Raspberry Aperol Sauce:
- Add fresh raspberries and Agave to a small saucepan.
- Heat on medium heat for 4 minutes.
- Smash berries with a potato masher or a fork.
- Remove it from the heat, add Aperol and mix.
- Place it in a jar or a container.
- Cover and refrigerator for 2 hours.
To make the cocktail:
- Add 2 scoops of ice cream to two large cocktail glasses.
- Place 1/4 cup of the Raspberry Aperol sauce to each glass.
- Add a splash of club soda to each glass (about 1 ounce each).
- Top with Prosecco.
- Garnish with fresh raspberries.
