Now that I have my new Kitchenaide Stand Mixer Sprializer, making pickled beets is a snap. And with this easy recipe you can make then now and have pickled beets in less than two hours.
2 beets – either sliced or spiral cut – I like to use both red and yellow beets
1/2 apple cider vinegar
1/3 cup sugar
1 TBS salt
Cut beets and set aside
In a small stove-top pan, add vinegar, sugar and salt – heat until the sugar melts.
Take it off the burner and let it cool for about 10 minutes.
Pour vinegar sugar mixture over beets, cover and let them sit at room temperature for 1-2 hours. They can be stored in the refrigerator for up to a week.
