Ooey Gooey Cheese Goodness. I made this Mother’s Day weekend when the kids came by for a visit. I had to snap this photo fast because it was gone in a flash. Our new fam favorite!
INGREDIENTS
1/2 lb. Chorizo sausage – removed from casing or lose if you can find it at your grocer
1 jalapeno pepper – seeds removed and diced small
2 ears of grilled corn removed from cob OR 1 small bag frozen corn thawed
1/2 lb. shredded mozzarella cheese
1/2 lb. shredded Queso Blanco cheese
1/2 lb. shredded jack cheese
Tortilla chips
DIRECTIONS
Preheat oven to 375 degrees
Brown chorizo until it’s crumbly and just starting to turn crispy
In a cast iron skillet or a large oven proof dish, stir together all ingredients except tortilla chips.
Bake for 15 minutes until cheese is bubbly and starts to turn brown.
Remove from oven and serve immediately with tortilla chips for dipping.
