The Best of Summer Snacking

Fresh summer stone fruit makes some of the best recipes. We love this easy appetizer that can be assembled ahead of time and grilled for just a minute to give the prosciutto a charred salty taste that goes perfectly with the juicy fresh peaches and salty feta cheese. They are easy and elegant and seriously, who can resist peaches wrapped in pork?

Ingredients

Let’s Make Prosciutto Wrapped Peaches and Feta

  1. Slice peaches.
  2. Cut the prosciutto slices in half or in thirds if they are very long.
  3. Cut chunks of feta cheese about the same length as the peach slices.
  4. Hold a peach slice and a piece of feta cheese together and wrap snuggly with a slice of prosciutto.
  5. Repeat until all of the peach slices are covered.
  6. Brush both sides of the wrapped peach and feta with olive oil.
  7. Place 3-4 at a time into a hot skillet on the stove or the grill.
  8. Grill for 1-2 minutes on each side.
  9. Remove from grill or skillet and drizzle with balsamic vinegar or balsamic glaze.
  10. Garnish with fresh basil and serve.

Reader Questions

What is prosciutto?

It is an Italian dry-cured ham. It has a dry salty taste and is usually sliced very thin.

Can I use regular deli ham instead of prosciutto?

You can use small thin slices of deli ham but this recipe is MUCH better using the prosciutto.

Can I use nectarines instead of peaches?

Absolutely yes! This recipe would also be very good with fresh firm plums or apricots.

Krazy Kitchen Mom Tips

  • Prosciutto can be very expensive, so I recommend buying just the amount you need for the recipe. Ask the person at the deli counter to cut 6 very thin slices of prosciutto. You will save a lot of money and will not have any waste.
  • In my opinion, sometimes prosciutto can have too much fat. I find the extra fat tends to make it a bit chewy. I like to peel off some of the larger fat pieces while leaving the smaller thin lines which hold a lot of flavor.
