- 3.4 oz. box of instant pistachio pudding mix
- 2 teaspoons baking powder
- ½ teaspoon salt
- ¾ cup sugar
- ½ cup extra virgin olive oil
- ½ teaspoon almond extract
- ½ cup sour cream
- ½ cup milk
- ½ cup roasted chopped pistachios

- 3/4 cup powdered sugar
- 2 tbsp milk
- ½ teaspoon almond extract
- ½ cup roasted chopped pistachios
Let’s Make Pistachio Olive Oil Bread
Bread
- Preheat oven to 350°.
- Spray a 9×5 loaf pan with nonstick spray and line the pan with parchment paper, allowing an overhang on the two ends. Spray parchment paper with non-stick spray and set aside.
- Whisk flour, pudding mix, baking powder, and salt in a bowl and set aside.
- Mix sugar, olive oil, almond extract, sour cream, and milk.
- Add dry ingredients to wet ingredients and mix. Do not over mix.
- Fold in chopped pistachios.
- Pour the bread mixture into the loaf pan and bake for 65-70 minutes. (Begin checking the bread at 55 minutes to see if it is done.)
- Allow bread to cool on a cooling rack.
- Top the bread with the glaze and garnish with chopped pistachios.
