Pistachio Pudding Cupcakes and Frosting

Ingredients

IFOR CUPCAKES

  • 1 box yellow cake mix
  • 1 cup water
  • 1/3 cup oil
  • 3 eggs
  • 1 box pistachio pudding mix

FOR PISTACHIO CREAM CHEESE FROSTING

  • 18 oz. block cream cheese – softened
  • 1/2 cup butter – softened
  • 1 box pistachio pudding mix
  • 4 cups powdered sugar
  • 1/2 cup milk

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix all ingredients together for 3-4 minutes in mixer. Pour into cupcake paper lined cupcake tin and bake for 19 minutes. Cool for 1 hour before frosting.
  3. While the cake is cooling, mix all frosting ingredients with hand mixer or stand mixer for 4-6 minutes until completely smooth.
