Move over grilling guys! We are putting more than just meat on the grill because it’s time for a Panzanella Salad. Char-grilled vegetables and bread cubes mixed with fresh tomatoes and cucumber burst with flavor when they are all tossed together with a tart Red Wine Vinaigrette. This is my new FAVORITE so watch out friends and family – you will see this one again and again.
1/2 English cucumber – cubed
5 plum tomatoes – cubed
1/2 sweet onion – cut in half and then ring slices
1/2 yellow bell pepper – in large slices
1 small whole wheat baguette – cut into large cubes
2 TBS Extra virgin olive oil
Salt and pepper to taste
Mix cubed tomatoes and cucumber in a small bowl and set aside
Brush onion rings and peppers with olive oil and grill on both sides until you have golden grill marks. (You can do this on an indoor stove-top grill or an outdoor BBQ grill.) When the vegetables are done, dice into smaller pieces and set aside until they cool a bit.
Toss bread cubes in olive oil, salt and pepper and grill on the same grill-top as the vegetables.
Mix grilled vegetables and bread with tomatoes and cucumber mixture; toss with Red Wine Vinaigrette.
