Why We Love This Recipe

My family loves chicken parmesan and it’s always at the top of the list when it comes to Italian restaurants. My baked version is not complicated, in fact, it’s super simple. It has a secret ingredient that keeps the chicken extra crispy on the outside and moist and tender on the inside. And of course, creamy melty mozzarella cheese on top is always a fan-favorite.

Ingredients

  • Two chicken breasts
  • 1 cup seasoned Panko bread crumbs
  • Secret Ingredient – 1/3 cup mayonnaise
  • 1 cup finely grated parmesan cheese
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup prepared marinara sauce
  • 8 slices of fresh mozzarella cheese

Let’s Make Oven-Baked Chicken Parmesan

  1. Preheat oven to 400.
  2. Slice chicken breast through the middle to make four thinner breast pieces.
  3. Slather mayonnaise on both sides of the chicken.
  4. Mix Panko, parmesan cheese, salt, pepper in a large flat dish or plate.
  5. Dredge both sides of the chicken breasts through the bread crumb mixture pressing down to cover the entire breast.
  6. Place the four breasts on a parchment paper-covered cooking sheet and back for 25-30 minutes until golden brown. Watch carefully so the parmesan coating doesn’t burn.

  1. Remove the chicken from the oven and spoon 1 -2 tablespoons of the prepared marinara sauce on each breast.
  2. Set the oven to broil.
  3. Top each breast with 2 slices of mozzarella cheese.
  4. Broil for 2-3 minutes, watching carefully, until cheese is melted.

Krazy Kitchen Mom Tips

  • For a full meal, serve the chicken with a side of spaghetti or buttered noodles, and garlic bread.
  • This chicken also makes a fantastic chicken parmesan sandwich. Simply place a piece of chicken between two slices of an Italian loaf or hoagie roll, and slather it with marinara sauce.
  • I recommend leaving the oven door cracked when using the broiler to finish a recipe. That way you can watch it carefully and remove it immediately if needed.
