This dressing takes me back in time. It’s loaded with fresh herbs and satisfies that need for creamy rich dressing. I serve it with BBQ Cob Salad.
3/4 cup sour cream (I use low fat – just because it makes me feel a bit healthier)
3/4 up mayo (same think – low fat)
1/2 fresh parsley – chopped
1/4 fresh tarragon – chopped
1 garlic clove – chopped
4 TBS fresh chives – chopped
1 squeeze fresh lemon juice
1 teaspoon anchovy paste
1 TBS dry ranch salad dressing mix (this is my secret ingredient)
1/4 cup extra virgin olive oil
Mix all ingredients in a blender or mixer except olive oil. While blending on low speed, drizzle in olive oil – mix until emulsified; chill and serve with your favorite greens or crudités.
