If you love the taste of chocolate and coffee together, you’re going to love Mocha Coffee Chia Pudding. This dessert is actually healthy and good for you!
This dessert couldn’t be any easier to prepare. It literally takes 3 minutes to put it together. If you’ve never had chia pudding, it has the same consistency of tapioca. I’ve read that chia seeds are one of the healthiest foods in the world. They come from a flowering plant and are protein and fiber packed. And to add more health benefit, they help raise the “good” cholesterol.
When you add chia seeds to a liquid, they plump up and become soft. Which is why they are so good (and easy) for making puddings. My Mocha Coffee Chia Pudding is even more healthy because I used almond milk as the base.

Mocha Coffee Chia Pudding

Ingredients
- 1 cup unsweetened almond milk
- 1 cup chocolate flavored almond milk
- 1/2 cup white chia seeds
- 1 TBS instant (granulated) coffee
Instructions
- Place all of the ingredients into a large-sized mason jar and shake vigorously.
- Refrigerate overnight.
- Serve cold, topped with berries or pomegranate seeds.
Notes
When using chia seeds to make pudding, the ratio is always 1/4 cup of seeds to 1 cup of liquid.
