The Marinated Manchego and Olives are the perfect addition to any charcuterie board, appetizer platter, or snack.

With its irresistible combination of complex flavors, it is sure to leave your taste buds delighted.

Its creamy, yet crunchy texture is wonderfully surprising. And to top it off, its fresh and zesty ingredients add a vibrant burst of flavor to every bite. Not to mention, it’s an effortless dish to make so that you can whip it up in minutes.

Ingredients

  • ½ cup whole seeded Castelvetrano olives
  • ½ cup whole Kalamata olives
  • 7 oz. block of Manchego cheese
  • 4 slices of lemon rind about 2-3 inches long
  • 1 teaspoon dry Italian seasoning
  • ½ teaspoon red pepper flakes
  • 1 tbsp capers
  • ½ teaspoon cracked black pepper
  • ½ cup extra virgin olive oil

Let’s Make Marinated Manchego Cheese and Olives

  1. Dice the cheese into cubes and place in a small bowl
  2. Drain and add olives and capers.
  3. Add seasonings and lemon rind.
  4. Add olive oil and mix.
  5. Cover and refrigerate for 2 hours.

  • Store covered in the refrigerator for 2 weeks. If the olive oil solidifies, remove them from the refrigerator for 1 hour before serving.
  • Add these to a charcuterie board or cheese platter, eat as a snack, or serve on an appetizer table.
