Ingredients
- ½ cup whole seeded Castelvetrano olives
- ½ cup whole Kalamata olives
- 7 oz. block of Manchego cheese
- 4 slices of lemon rind about 2-3 inches long
- 1 teaspoon dry Italian seasoning
- ½ teaspoon red pepper flakes
- 1 tbsp capers
- ½ teaspoon cracked black pepper
- ½ cup extra virgin olive oil
Let’s Make Marinated Manchego Cheese and Olives
- Dice the cheese into cubes and place in a small bowl
- Drain and add olives and capers.
- Add seasonings and lemon rind.
- Add olive oil and mix.
- Cover and refrigerate for 2 hours.

- Store covered in the refrigerator for 2 weeks. If the olive oil solidifies, remove them from the refrigerator for 1 hour before serving.
