This marinade makes flank steak tender and full of robust flavors. The longer it marinades the better it tastes, so give yourself 24 hours for this one.
INGREDIENTS
1.5 lbs. flank steak
2 limes – quartered and juiced (saving juice for marinade)
1 small onion – quartered
1 jalapeno pepper – halved and seeded
2 garlic cloves – halved
1/3 cup extra virgin olive oil
1/3 cup low sodium soy sauce (I only use low sodium when I use soy)
1 TBS honey
1 teaspoon each of: cumin, garlic powder, chili powder, paprika, and dried oregano
DIRECTIONS
Mix all ingredients, including halved onion, garlic, jalapeno and lime quarters, in a zip-top bag. Add flank steak and marinade in the refrigerator for 12-24 hours. Make sure that you flip the bag over every so often so that the flavor get into all of the steak.
After 12-24 hour, discard marinade and grill flank steak until it begins to really brown and caramelize. We use this meat for making street tacos or just plain served with rice and corn.
