Loaded Cauliflower Casserole is a hearty low carb/keto diet-friendly dish. It’s made with steamed and roasted cauliflower packed with cheesy and bacon goodness.

I’m sure you’ve had a loaded baked potato filled with sour cream, cheese, bacon, and onions. Well, think loaded baked potato filling with cauliflower. Bite-sized pieces of cauliflower covered in cheese and bacon and smothered in sour cream – it really doesn’t get any better. And I’m speaking the truth because I’m not much of a cauliflower lover, but my husband loves it. After tasting this recipe, I think I’m becoming more of a cauliflower person myself.

A colleague gave me this recipe over a year ago. I actually made it right away a couple of times after that and everyone loved it, but I just never got around to sharing it on my blog. Not sure what took me so long, but I’m happy to share it now. And I’ll thank my colleague, Doug, next time I talk to him from you all because I know you’re going to love it too!

Loaded Cauliflower Casserole ingredients

There are a few easy ingredients to this dish:

  •  Cauliflower
  • Cheddar Cheese
  • Sour cream
  • Cream cheese 
  •  Bacon
  • Green onions

What to serve with this Loaded Cauliflower

This is the perfect dish to eat alone or serve it as a side dish. My husband actually likes to eat this alone as a hearty dinner. But here are some other ways to serve it:

  1. This dish goes great with baked ham. You could also add pieces of diced ham to the recipe and have a Loaded Ham and Cauliflower Casserole.
  2. It goes well with chicken and turkey; it would be a great side dish for Thanksgiving.
  3. Think meat and potatoes, but actually meat and cauliflower! Serve it with a roast or with pork chops.
  4. Think breakfast. If you’re not doing a low-carb or keto diet, add a slice of toast and you have a great Sunday morning breakfast or brunch.

Description

Loaded Cauliflower Casserole is a hearty low carb/keto diet-friendly dish. It’s made with steamed and roasted cauliflower packed with cheesy and bacon goodness.  


Ingredients

Scale
  • 1 large head of cauliflower
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream
  • 4 ounces cream cheese softened
  • 6–8 slices of bacon 
  • ¼ chopped green onions
  • 1 teaspoon salt
  • 1 teaspoon pepper

Instructions

  1. Preheat oven to 350°
  2. Cut bacon into small pieces and cook it on the stovetop until it is crispy; set aside.
  3. Steam cauliflower in a steamer basket on the stovetop or in the microwave in a steamer bag.
  4. Set aside 1 TBS green onions and bacon for garnish after cooking. 
  5. In a large bowl mix together sour cream, cream cheese, shredded cheddar, remaining bacon, remaining green onions, salt, and pepper.
  6. Fold cauliflower into cheese mixture.
  7. Spray baking dish with nonstick cooking spray. 
  8. Add cauliflower mixture to a baking dish, cover it with foil and bake for 25 minutes. 
  9. Remove foil and bake for another 10-15 minutes until it starts to turn brown on top. 
  10. Garnish with the bacon and onion you had set aside.
