As promised and staying on the healthy side, this is Part 2 to of the series TIME TO GET SERIOUS – Let Them Eat Fresh Fruit!
We’re coming up with all sorts of ways to cook, serve and eat fresh fruit. And what better time to indulge when the markets and farm stands are full of fresh, colorful, ripe and juicy produce!
Let’s start with fruit – we love berries, pineapple and mangos because they are so versatile. You can eat them plain, cook them and even serve them as the main ingredient in a dessert.
Fresh Strawberry Sauce – Make this sauce and use it to top pancakes, yogurt, chicken and fruit kabobs. The tart but sweet flavor will certainly kick it up a notch!
Mango Salsa – Once you make this, I promise it will become a mainstay at your house. We love to make this on the weekend and serve it over baked or grilled fish and then use it during the week to top chicken or a fresh spinach salad.
Sweet Kabobs – They’ll oooo and ahhhh when you bring these to the table. We top them with either Greek yogurt or caramel sauce (not too much because you’re trying to keep it healthy!). You could even splurge and top them with chocolate sauce (shhhh – I won’t tell).
