So Lemon – cheesecake – mousse – three words that individually, or together put a smile on my face!
This is so easy, you’ll pinch yourself for saving desserts like this for special occasions. Go ahead and treat them to a treat!
Lemony Cheesecake Mousse
- 1 8 oz. box of cream cheese (soften at room temperature)
- 1/2 container Cool Whip
- 1 cup lemon curd
- 1 teaspoon vanilla extract
- Zest from 1/2 lemon
- In stand mixer (or with a hand mixer) combine all ingredients until well mixed.
- Pipe or spoon into dessert glasses, top with strawberries and lemon zest and chill for at least two hours.
