No bake lemon pies – tart, sweet, creamy, crunchy. And you can kick them up for the adults with a bit of Limoncello.
INGREDIENTS (Four servings depending upon the jar size – I use a small jar for these since they are rich.)
10-12 Shortbread cookies – crushed
1 jar of lemon curd (or you can use homemade)
3/4 of a container of Cool Whip topping – thawed slightly
1-2 shots of Limoncello (optional)
Cookies for garnish
DIRECTIONS
Mix 3/4 the Cool Whip with the Limoncello.
Layer the crushed cookies, lemon curd and Limoncello Whip in small jars, seal and place in refrigerator for 2 hours. Serve with a cookies garnish.
