If you’ve been following me and my recipes, you know that I will eat anything that has lemons in it. I just love the bright fresh flavor of lemons. This is a quick dinner that tastes like you spent hours and I bet you have all of these ingredients on hand.
Serving Size: 2 – this can easily be doubled
2 thin chicken breasts
1/2 package pasta – cooked per the package directions
2 cups of fresh spinach
1-2 lemons depending upon size
2 TBS butter
2 TBS extra virgin olive oil
1/4 parmesan cheese
1/4 white wine (or chicken stock)
Salt and pepper to taste
Toasted Almonds (Toasted Toppings)
Prepare pasta per package (save 1/4 cup of the pasta water for the sauce)
Salt and pepper chicken breast and cook on stove top pan with olive oil. When fully cooked, remove from pan and set aside.
Deglaze the pan with the wine. Add juice from the lemons and butter. Whisk for 1 minute until combined. Add cooked pasta and pasta water.
Stir in spinach and parmesan cheese and cook for 2-3 minutes. Add chicken and serve with toasted almonds on top.
