All it takes to make the most amazing and fluffy Lemon Glazed Olive Oil Cake is a box mix, a few egg whites, and some olive oil.
You are probably looking at the slice of this fluffy mouthwatering cake and are thinking you read the title wrong – Lemon Glazed Olive Oil Cake. But you didn’t read it wrong – it says olive oil cake. I know, I was skeptical too – a cake made with olive oil? How can that be any good at all?
I’ve seen chefs and bakers on TV and in magazines rave about olive oil cake and it’s been on my to-do list for a long time. So I decided to get it off my list and onto a plate. My problem is that I love cake but I really like to use a boxed mix as the base – so that’s what I did.
A few simple ingredients and I was ready to bake my cake. I used:
- White cake mix
- 3 eggs whites
- 1 cup of water
- 1/3 cup extra-virgin olive oil
That’s it, 4 simple ingredients – three if you don’t count water as an ingredient 🙂
Here’s a list of equipment you will need for this recipe:
- Hand mixer and a mixing bowl or stand mixer
- Measuring cup
- Cake pan – I used a springform cake pan
- Small dish to make the glaze
- Whisk (or a fork) to make the glaze

Lemon Glazed Olive Oil Cake

Ingredients
For the cake:
- White cake mix
- 3 eggs whites
- 1 cup water
- 1/3 cup extra-virgin olive oil
For the glaze:
- Juice of 1 large lemon
- 1 cup confectioners sugar
- Red food coloring (optional – or use any color you’d like)
Instructions
For the cake:
- Preheat the oven to 350°
- Place all the ingredients in a bowl and mix for 2 minutes.
- Spray non-stick cooking spray on inside of the pan.
- Pour cake into can pan and cook according to the package directions, depending up the size of your cake pan.
- Cool cake completely before glazing.
For the glaze:
- Juice the lemon into a bowl.
- Whisk in confectioners sugar 1/4 cup at a time.
- If the glaze is too thin, add extra sugar a tablespoon at a time.
- If the glaze is too thick, add a very small amount of water.
- Add food coloring and whisk until completely smooth
- Place cooled cake on a baking rack with paper towels under the rack.
- Pour glaze over cake allowing it to drip down the sides.
