My Mom, Jo, made the BEST EVER Meatball Subs. They are hearty and satisfying with melted provolone cheese. This a comfort food in my heart.
MEATBALLS INGREDIENTS
1 lb. ground beef
1 small onion – diced small
1/3 Panko bread crumbs – you can use the plain or Italian flavor
1/4 cup milk
1 egg
5 dashes Worcestershire sauce
1 teaspoon Italian spice seasoning
1/8 cup grated parmesan cheese
salt and pepper
3 tablespoons extra virgin olive oil
MEATBALL DIRECTIONS
Mix all ingredients and roll meat mixture into balls. The size of the balls will vary depending on the type and size of the sub roll you are using.
Preheat oven to 375 degrees.
Brown meat balls on in a skillet with the olive oil on stove top until they are browned on all sides.
Place a large ladle of prepared jarred pasta sauce or use the Sunday Sauce (under the pasta tab) on the bottom of a large baking pan. Place meatballs on top of sauce and bake in oven for 20-25 minutes.
Remove meat balls and you are ready to assemble sub.
SUB ASSEMBLY
Reduce oven heat to 350 degrees. Slice open sub roll of choice. Place 2 slices of provolone cheese into roll and top with meatballs to fill. Wrap each sub individually in non-stick foil and bake in 350 degree oven for 5-7 minutes.
Serve immediately out of oven.
