Jalapeño Popper Bites are an easy make-ahead appetizer or snack using simple ingredients that everyone loves.
I first tested this recipe with my husband and my son, Steve. It didn’t take the two of them long to eat over a dozen and ask for more. The next time I tested it was with my other son, Greg, his wife, Alyson and my daughter, Taylor. Guess what? Same response. That’s all I needed to know this one’s a winner.
You only need a few simple ingredients:
- A bag of Scoops tortilla chips or any other type of chips that can hold the filling.
- Cream cheese
- Cheddar cheese
- Jalapenos
- Bacon
The equipment you’ll need for this recipe:
- Medium-sized mixing bowl.
- A mixing spoon and a sharp knife.
- A small cookie scoop (a small spoon is fine if you don’t have a scoop).
- A cookie sheet.
- Parchment paper.
Here’s the small scoop I have that I absolutely love:
Make-ahead tip: Make the filling a day ahead and store it in the refrigerator. When you’re ready to bake them, simply fill the chips and bake. You can sever them right out of the oven, which is how we like them. But they’re also good a room temperature.

Ingredients
- 8-ounces softened cream cheese
- 7–8 jalapenos – seeds and ribs removed and diced small
- 8–10 slices of bacon – cooked and diced
- 4-ounces of shredded cheddar cheese
- 1 bag of tortilla chips
Instructions

Preheat oven to 400°
- In a medium-sized bowl mix together, cream cheese, cheddar cheese, jalapenos, and, bacon.
- Line a cookie sheet with parchment paper.
- Place chips on the cookie sheet and fill with a scoop or spoonful of the mixture.
- Bake for 15-17 minutes until the cheese mixture is melted.
- Prep Time: 5 minutes
