Italian Style Stuffed Bell Peppers are bell peppers stuffed with seasoned ground beef, tomatoes sauce and topped with cheese.

I didn’t grow up eating stuffed peppers. In fact, I didn’t even know what they were until I started dating my Italian boyfriend (now husband). I grew up in an Irish family and we ate stuffed cabbage.

Italian Style Stuffed Bell Peppers

Many cultures have vessels for stuffed like Greek stuffed grapes leafs. There are also a lot of versions of stuffed bell peppers, but we prefer the Italian style. I use simple ingredients of seasoned ground beef, onion, tomato sauce and mozzarella and provolone cheeses. They are very easy to make ahead and ready to pop into the oven when you are ready to cook them. Make ahead dinners are one of my favorites, not just because they are convenient but because they are also perfect when you are having company. You make everything ahead so you can enjoy your guest while the meal is baking.

My husband also likes this dish as a leftover lunch because they are easy to transports and easy to warm in the microwave. And for you dating guys and gals, this is an impressive dinner to put in front of your date.

Description

Italian Style Stuffed Bell Peppers are bell peppers stuffed with seasoned ground beef, tomatoes sauce and topped with cheese. 


Ingredients

Scale
  1. Four bell peppers
  2. 1.5 lbs. ground beef
  3. 1 onion – diced
  4. 1 TBS extra virgin olive oil
  5. 1 small jar prepared spaghetti sauce
  6. 1 small can of diced tomatoes
  7. 2 cups cooked orzo pasta
  8. 1 TBS dried Italian seasoning
  9. 1 cup mozzarella cheese
  10. 4 slices provolone cheese

Instructions

  1. Preheat oven to 350°
  2. Cut the tops off of the bell peppers, remove the seeded core and all of the seeds.
  3. Heat the olive oil in a stovetop skillet, add onions and cook for 5 minutes.
  4. Add ground beef and cook until it is fully browned.
  5. Pour off any excess oil.
  6. Add prepared sauce and canned tomatoes (with juice)
  7. Add Italian seasoning.
  8. Cook for 10 minutes.
  9. Add cooked orzo pasta and cook for another 5-10 minutes.
  10. Place the bell peppers into a casserole dish.
  11. Fill bell peppers with meat/pasta mixture.
  12. Add any extra meat/pasta mixture to the bottom of the casserole dish along with 1/3 cup of water.
  13. Sprinkle the tops of each pepper with mozzarella cheese.
  14. Cover and bake for 35-40 minutes.
  15. Uncover peppers, top each with a slice of provolone cheese.
  16. Bake for another 10 minutes.
  • Prep Time: 15 minutes
  • Cook Time: 65 minutes
