The soft texture, delicate sweetness, and lemon glaze of Italian Easter cookies make them the perfect way to celebrate the Easter season.

Why We Love These Cookies

Tradition: Italian Easter cookies are steeped in tradition, often passed down through generations.

Flavor and texture: The soft texture of a bite-sized cookie glazed with sweet tangy lemon glaze is a delightful flavor combination that goes well with coffee and tea.  

Festive: These cookies are not just delicious but decorated with sprinkles and sprinkles make everything festive.

Ingredients

Cookies

  • 1-1/2 cup flour
  • 1 teaspoon baking powder
  • Pinch of salt
  • ¼ cup sugar
  • 1 egg at room temperature
  • ¼ cup melted and cooled (to room temp) butter
  • ¼ cup of milk
  • Zest of 1 lemon

Glaze

  • 3 tbsp freshly squeezed lemon juice
  • 1 cup powdered sugar

Let’s Make Italian Easter Cookies

Whisk the sugar and lemon juice until the sugar is fully dissolved and there are no lumps. Set aside.

Cookies

  1. Whisk flour, baking powder, and salt, and set aside.
  2. Beat sugar, egg, butter, milk, and lemon zest until smooth.
  3. Add flour mixture, ¼ cup at a time, and mix until dough comes together.
  4. Line a baking dish with parchment or a non-stick mat.
  5. Break off small pieces of the dough, roll in your hands to make a rope, and bring the rope together to form a knot or knot-like shape.
  6. Bake for 13-15 minutes, until bottoms are light brown.
  7. Allow the cookies to cool completely, dip them into the glaze, and decorate them with sprinkles.

Don’t Overwork the Dough: When mixing the dough, be careful not to overwork it. This can make the cookies tough rather than soft and tender. Gently combine the ingredients until just mixed for the best texture.

Watch the Cooking Time: All ovens are different so check the cookies at 13 minutes and cook for an additional 1-2 minutes if needed.

Let the Cookies Cool Completely Before Decorating: After baking, allow the cookies to cool completely before adding any icing or decorations.
