Most mornings are a bit rushed but I am a stickler for breakfast. I have learned over the years that if I don’t eat breakfast, I just cannot get through the day without snacking. And once I start snacking it continues most of the day. Along with my breakfast need I also have the need to have protein early in the day and since I love Greek yogurt, Honey Yogurt Breakfast Parfaits are perfect.
I make them ahead of time and store them in the refrigerator for 2-3 days. For this recipe, I used strawberries, blueberries and mandarine oranges because that what I had on hand. I always have a big jar of honey and a large tub of Greek yogurt, which makes it easy. Speaking of honey, I am in love with the honey jar my daughter got me for Christmas this year. I feel like I want to drizzle honey everywhere.
Of course, you can use any fruit you’d like and I think these would also make a great after school snack and the kids would think they were getting a very special treat.Print
- 1 cup plain Greek yogurt
- 2 TBS honey
- 1 teaspoon vanilla
- 1/4 each of diced strawberries, blue berries, mandarin oranges
- Whip yogurt, honey and vanilla together until blended and creamy.
- In large glasses or jars, layer the yogurt and fruit.
- Optional – top with granola.
