- 6-8 medium-sized carrots
- 2 beets
- 2 tbsp honey
- 2 tbsp maple syrup
- 3 teaspoons extra virgin olive oil
- ¼ teaspoon apple cider vinegar
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 ball burrata cheese
- 2 tbsp fresh chopped rosemary
- Crushed pistachios
Let’s Make Honey Maple Roasted Beets and Carrots with Burrata
- Preheat oven to 425°.
- Wash and peel carrots.
- Wash and peel the beets; slice the beets into quarters or eighths.
- Toss beets and carrots with honey, syrup, olive oil, salt, and pepper.
- Transfer to parchment paper lined baking sheet.
- Bake for 15 minutes.
- Stir and bake for 15 minutes until a fork is easily inserted into the beets and carrots. If the carrots are ready before the beets, remove them and set them aside. Continue to cook the beets, in 5-minute increments, until done.
- Remove from oven and rest it on the countertop for 15 minutes.
- Arrange the carrots and beets onto a serving platter.
- Top with burrata cheese.
- Drizzle with 1 tbsp extra virgin olive oil.
- Salt and pepper if needed.
- Top with crushed pistachios and chopped rosemary.
